Chocolate Gravy

A simple chocolate gravy from Art of the Biscuit with Karl Worley, cooked until the chocolate melts into heavy cream and reaches a gravy consistency.

Ingredients

1 pound 67% cacao chocolate 

1 cup granulated sugar 

1 quart heavy cream 

2 teaspoons Kosher salt

Preparation

Step 1. 

Heat heavy cream over medium-low heat to simmer.


Step 2. 

Add sugar, chocolate, and salt to the cream.


Step 3. 

Cook, stirring constantly for 8 to 10 minutes until chocolate melts and mixture has a gravy consistency.
